Cucumber anyone??

Wow, its been awhile. At the time I started this blog it was because I had alot of time on my hands and needed a project. However, my world became quite busy with two jobs and then house work, and weddings and wedding showers and baby showers and on and on the list goes. :) The last time I wrote I had big plans of decorating my house. Well, lets just say decorations are alot more expensive than I originally thought. So that project is on hold while I save some money. So I am onto another project. I started a garden a couple of months ago and while its not the prettiest thing in the world it is producing  nicely. I have been very excited about my garden and couldnt wait to eat the lettuce and zucchini and carrots. So tonight my husband and I went out to see how it all was doing and we found a ton of what I had thought was zucchini. So we took one inside, washed it and cut off a chunk to taste....it tasted very good, but it did not taste like zucchini. Probably because instead of zucchini.....it was a cucumber. So I now have a garden full (and when I say full I mean really full) of carrots, lettuce and most of all......cucumbers. Oh the little things we learn. Next year I will read labels more clearly. I guess the best thing to do is just laugh......and find a lot of recipes for cucumbers. :) If any of my blogger friends out there have any ideas on what to do with a ton of cucumbers besides salad let me know or if you ever need a free cucumber and are in the area give me a call I will give you a couple. :)

  1. Can your own pickles. When I was younger, I remember my mom and her friend making pickles. Everyone would rave about how they were better than anything in the stores. If you're interested I can ask them if they still have the recipe.

  2. Thanks Karrie!! That would be great!! I love pickles :) My grandmother used to make bread and butter pickles. They were the best!!

  3. Refrigerator Pickles

    8 med. cucumbers, sliced
    4 cups vinegar (white not artificial)
    4 cups sugar
    1/2 cup salt
    1/2 tsp celery seed
    1/2 tsp turmeric
    4 onions, sliced

    Put onions in bottom of large container. Let vinegar, sugar and salt set in bowl until dissolved. Add the other spices and pour over cucumbers and let sit in refrigerator. Ready in about 1 week but keeps for up to 9 months.
